Domaine Pattes Loup Thomas Pico Chablis Vent d’Ange

Domaine Pattes Loup is a small, Demeter certified biodynamic and organic estate in Courgis, in the Chablis region of Burgundy, founded by Thomas Pico in 2005. He took over vines from his family and began planting his own at the site called Pattes Loup, after which the domaine takes its name. Certified organic since 2009 and now Demeter certified biodynamic, Thomas farms with a meticulous, low-yield approach across steep hillside vineyards, prioritising quality over quantity, and has become one of the most exciting names to emerge from Chablis in recent years.

Vent d'Ange blends fruit from the original Pattes Loup plantings with older vines, thirty five to forty years old, on the Ménardes and Malentes sites, all grown on Kimmeridgian marl. The wine spends three winters on its lees, around 30 months in total, before bottling. Expect a pure, citrus driven Chablis with a subtle creamy texture, ripe pear, a floral lift and a long, mineral finish. A brilliant match for shellfish, white fish or a simple beurre blanc.
