Their 'Astragalus' is a captivating rosato crafted entirely from fifty-year-old Nerello Mascalese vines. Grown at 800 metres in the Milo area on soils of volcanic gravel and sand, the grapes undergo just a brief 6-hour maceration, yielding a delicate, pale pink colour, before fermenting in stainless steel. The wine then ages for 12 months on fine lees in French oak tonneaux with weekly bâtonnage, resulting in a rich, complex texture driven by Etna's signature sea-breeze salinity and striking volcanic minerality.
