Domaine Lucien Boillot & Fils is a sixth generation family estate based in Gevrey-Chambertin, with roots stretching back to Volnay. Pierre Boillot now runs the domaine, farming old vines across both the Côte de Nuits and the Côte de Beaune with a traditional, hands on approach and a focus on quality over volume. His range is built almost entirely on Pinot Noir; this Puligny-Montrachet is the solitary white in his cellar, made from a single, tightly held parcel.
The vines sit within the Les Perrières premier cru, planted in 1965 on clay and limestone soils. The wine is aged in oak, no more than 30 percent new, for 16 to 18 months, then bottled by gravity without filtration or fining, using only indigenous yeasts. Expect a brilliant golden colour, subtle oak, white orchard fruit and a fine mineral edge, with real volume on the palate and a long, persistent finish. A serious white Burgundy worth setting aside for a special occasion.
