Les Dolomies is an organic estate in Passenans, Jura, founded by Céline in 2008 and joined by her husband Steve Gormally in 2016. Together they farm several hectares of vines across the region's distinctive dolomite soils, working indigenous grape varieties with minimal intervention in the cellar, and have become a benchmark producer for their small home village.
La Chaux comes from a single, steep, southwest facing plot in Nevy-sur-Seille, at the edge of the Baume-les-Messieurs valley, where a thin layer of limestone scree sits over marl. Hand harvested and fermented with indigenous yeast, the wine is aged in barrel for around 18 months, topped up throughout to keep it fresh, then bottled unfiltered with minimal sulphur. Expect a pure, zesty Chardonnay with citrus and roasted almond notes, backed by real mineral drive and intensity. A great match for roast white meats, seafood or a washed rind cheese.
