Les Dolomies Bordel C’est Bon Trousseau Jura
Les Dolomies is an organic estate in Passenans, Jura, run by Céline and her husband Steve Gormally. Céline started the domaine in 2008 and Steve joined in 2016, and together they farm several hectares of vines with minimal intervention, focusing on the traditional and often overlooked grape varieties of the region.
Bordel c'est Bon, loosely translated as "this is bloody good", is 100% Trousseau from the Les Combes plot in Passenans, planted in the 1950s on iridescent marl rich in magnesium limestone. Fermentation and ageing take place in enamelled steel tanks, and the wine is bottled without sulphites or filtration. Expect a juicy, energetic red with bright red fruit, a peppery, spiced lift and real wild character. A brilliant chillable red for grilled meats, braised dishes or simply on its own.
