Pale, light and very fresh: the Pupillin Ploussard in its purest form. Hand-harvested, fermented in oak with indigenous yeasts and a semi-carbonic maceration. Morello cherry, redcurrant, wild strawberry and quince, all lifted and precise. Lovely with chicken and morels.

Made at Maison Pierre Overnoy in Pupillin by Emmanuel Houillon, Pierre Overnoy's protégé, who carries on his mentor's insistence on wine made without added sulphur. The vines are farmed organically (Ecocert certified) with yields never above 35hl/ha, and the wines are neither fined nor filtered and no added sulphites.
