En Aspis 2021 is a single‑vineyard Ploussard (Ploulsard) from Renaud Bruyère and Adeline Houillon, farmed biodynamically on clay‑rich slopes in Arbois‑Pupillin. Hand‑harvested, destemmed and gently vinified with semi‑carbonic maceration, it’s feather‑light yet deeply flavoured, all red cherry, wild strawberry and savoury, stony minerality. A highly sought‑after natural Jura red with microscopic production.
