Adegas Guimaro Blanco Ribeira Sacra

Adegas Guímaro is a small family winery in Sober, in the Amandi subzone of Ribeira Sacra, Galicia, farmed by the Rodríguez family on some of the region's steepest slate terraces. The estate farms organically, working old vines across multiple plots and collaborating with respected Galician winemaker Raúl Pérez.

This Blanco is made predominantly from Godello, grown on slate, granite and sandy soils, fermented with native yeasts and given time on its lees for extra texture. Expect green apple, pear and citrus, with a fresh, mineral backbone and a lightly saline finish. A brilliant, versatile white for seafood or on its own.
