Certified organic since 2009 and now Demeter certified biodynamic, Thomas farms with a meticulous, low-yield approach across steep hillside vineyards, prioritising quality over quantity, and has become one of the most exciting names to emerge from Chablis in recent years.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eVent d'Ange blends fruit from the original Pattes Loup plantings with older vines, thirty five to forty years old, on the Ménardes and Malentes sites, all grown on Kimmeridgian marl. The wine spends three winters on its lees, around 30 months in total, before bottling. Expect a pure, citrus driven Chablis with a subtle creamy texture, ripe pear, a floral lift and a long, mineral finish.
