Crafted in Ardèche’s granite and alluvial soils, this 100% Syrah hails from 35-year-old vines in the lieux-dits Les Goutelles Hautes and Les Bourelles. Jean-François Jacouton, a third-generation vigneron, employs organic practices and revitalises abandoned stone terraces, mirroring Cornas’s historic methods. The wine reveals a ruby-purple hue with aromas of ripe blackberry, crushed pepper, violets, and smoky bacon. On the palate, vibrant red and dark fruits mingle with olive tapenade, mint, and earthy minerals, framed by structured tannins and a mouthwatering finish. Aged in cement, amphora, and large foudres with minimal new oak, it balances old-school Rhône intensity with modern precision. Pair with herb-roasted lamb or charcuterie.
